Case StudyAbstract : This case explores the journey of Tahera and Kumail Kirmani in building ‘Begum’s Authentic Hyderabadi Paya’ – a Bengaluru-based cloud kitchen. This kitchen was built on the model of ‘one dish, one day’, and was rooted in authenticity, scarcity and emotional value. The venture quickly gained traction due to its quality, and accelerated growth with the help of word of mouth and community participation with support. Demand grew, and the founders faced a critical dilemma – whether to scale and capture a growing opportunistic market, or preserve the intimate, experience driven business nature. The case shows the bigger gaping problem of scalability and authenticity. It questions whether growth can coexist with identity in artisanal and experience-based ventures.
Learning Objectives
• Evaluate the trade-off between scalability and authenticity in artisanal, experience-driven entrepreneurial ventures.
• Analyze unit economics, demand patterns, capacity limits, and capital investment requirements for scaling.
• Evaluate multiple growth pathways (single outlet, cloud kitchens, company-owned outlets, central kitchen, and franchising) against operational risk and brand equity.
• Design business model strategies (scarcity, focus, hybrid scaling) to achieve sustainable growth without diluting core value.
